The Perfect Fall Morning

pumpkin pancakesThis morning was a beautiful fall morning, which inspired me to make the yummiest pancakes I’ve ever tasted!  I was in the mood for pumpkin pancakes, but wanted a new recipe, so I went to one of my favorite recipe sites, allrecipes.com, and found this one.  The pancakes were amazing, and the syrup was to die for!  I love fall!  Hopefully, you will enjoy these as much as I did!  -Emilypumpkin pancakes2

COOKING TIPS from two busy moms:

Here’s a few cooking tips that have worked or are working for these two busy moms.  All of these tips save TONS of time in the long run, and make it so much easier to make dinner!

1. Cook your meat (chicken, beef, etc.) at the beginning of the month and freeze in meal sized portions. 

-We like to boil chicken, cut it up and freeze in meal sized portions.
-When a recipe calls for raw chicken to be cooked, we substitute our precooked chicken.
-Make sure to thaw the cooked chicken first, either in the refrigerator ahead of time, or in the microwave.
-Cook a large amount of ground beef and freeze in meal sized portions.

 

2. Chop and freeze commonly used vegetables:

-Carrots
-Green, red, yellow, or orange peppers
-Onions
-Any time a recipe calls for these veggies, take a few handfuls and toss it in!


3.  Buy bulk items and freeze in smaller portions:

-Cheese
-Butter
-Bread
-Frozen vegetables


4.  Keep ingredients on hand for 2 or 3 “go-to” meals:

-Spaghetti—pasta, spaghetti sauce, cooked beef (frozen)
-Tuna Melts—bread, tuna, mayo, cheese
-Burritos—cooked beef (frozen), beans, tortillas, cheese
-Sloppy Joes—cooked beef (frozen), can of Manwich, bread or buns
-Hot Dogs—hot dogs, buns
-Grilled Cheese & Tomato Soup—tomato soup, bread, cheese


5.  Bake your own bread:

-Take a day to make several loaves of bread and freeze extra loaves.
-Set out frozen loaf over night to thaw.


6.  Don’t forget about your crock pot!


7.  Make an extra meal and freeze for later:

-When you’re already making a casserole, make an extra and freeze it.
-Or, take a day and make several casseroles to freeze.


8.  Marinate chicken or steak and freeze:

-Place raw chicken or raw steak in freezer bag with marinade, and freeze until ready to use.

We Love Desserts

We love our meal planning system, but it only incorporates dinners.  So, we thought it only appropriate to throw some of the fun recipes your way each week, for free!  We LOVE desserts, and have a ton of favorites that just need to be shared.  So, today’s recipe is Cammie’s all time favorite dessert…Caramel Apple Cake.  This dessert is the perfect fall time treat, even though we admit to eating it any time of the year! Yum!

Welcome to Pocket Full of Posies, Perfect Pocket Meal Planning!

Why we started Pocket Full of Posies:

Cammie was looking for a way to gather her favorite recipes from all of her cook books into one spot and to take the work out of making meal plans.  She hated meal planning and weekly grocery lists and ended up cooking breakfast for dinner three times a week instead of planning ahead.

Emily also wanted her recipes in one spot, but really wanted to save large amounts of money.  Her goal was to cut her grocery bill in half while still making the meals she wanted every week.  She needed a structured plan so she would stop buying extra stuff.

So between the two of us we came up with the Perfect Pocket Meal Planning System.  We combined Cammie’s lack of cooking and Emily’s over buying and created a plan that fit both our needs.  We’ve been perfecting our system for almost a year.  Cammie now cooks and Emily cut her grocery bill in half! 

Our system was working so well for us we started telling our friends and family.  It turned out many of them needed the same help we did in meal planning and grocery savings and wanted in on the meal planning success.  We thought if our friends and family were this excited maybe more moms like us would want a little help too.
